When our new Smart Foodservice Warehouse opened a little while ago, I bought a 16 pound strip loin roast, and put it in the freezer. I will cut a couple of steaks off the ends to square it up. How long will it take to thaw a chunk of beef that size in the refrigerator ? For Christmas dinner, it will go in the Pit Boss at 300 to 325 degrees. I made up a prime rib style rub to put on the day before.
I will shoot for an internal temperature of 135 to 140. Any idea on how long that might take ?
 
I can't tell you how long to cook it as I've never cooked a whole Strip Loin. But, the defrosting will take 2 to 3 days. The longer the Rub is on the meat, the more the Salt will penetrate, giving a more tender, juicy product. I have had a Rubbed Rib Roast sit in the refer 5 days after defrosting 3 days and it was great...JJ

I'd get it out of the freezer and into the fridge today, not going to hurt anything. I'd pull it at a IT of 125º, the carryover will get you up to 135º in 20 minutes of rest time. RAY
 
Post up pics when you smoke it. Whole striploin is pretty cheap at GFS. Have considered smoking it a few times but never have found a post of one to view results.
