I'm new to the forum and am trying to find more information on TSM's 30lb Digital Country Smoker. I own their 5lb deluxe sausage stuffer, some of their grinding plates, and have been using their casings and accessories for a while now. Overall, I have been very pleased with their products and customer service and I do not mind paying a premium for their Made in USA equipment.
I realize they are a sponsor here so I'm wondering if any of you own their upgraded 30lb smoker? I feel like I have searched everywhere for months and not been able to find any reviews.
My only desired use for this product is hot and cold smoked charcuterie, primarily sausage, but some fish and bacon too. I will be using a Primo Oval XL for any barbequed pork butts, brisket, chicken, etc. so I need an electric smoker that is incredibly accurate at maintaining temperatures between 50 degrees Fahrenheit and 170 degrees Fahrenheit. I don't even really want a smoker that can exceed 170 degrees Fahrenheit, since according to Stanley and Adam Marianski, the authors of Home Production of Quality Meats and Sausages, exceeding 170 degrees Farenheit in the smoke chamber is highly detrimental to sausage quality.
I am a temperature control fanatic and really hope the TSM 30lb Digital Country Smoker is the best electric smoker on the market for less than $1,000. If you can offer me any insight on this product, I would really appreciate it. Thanks all!
