Hi Everyone!

I'm new to the forum and am trying to find more information on TSM's 30lb Digital Country Smoker.  I own their 5lb deluxe sausage stuffer, some of their grinding plates, and have been using their casings and accessories for a while now.  Overall, I have been very pleased with their products and customer service and I do not mind paying a premium for their Made in USA equipment.

I realize they are a sponsor here so I'm wondering if any of you own their upgraded 30lb smoker?  I feel like I have searched everywhere for months and not been able to find any reviews.

My only desired use for this product is hot and cold smoked charcuterie, primarily sausage, but some fish and bacon too.  I will be using a Primo Oval XL for any barbequed pork butts, brisket, chicken, etc. so I need an electric smoker that is incredibly accurate at maintaining temperatures between 50 degrees Fahrenheit and 170 degrees Fahrenheit.  I don't even really want a smoker that can exceed 170 degrees Fahrenheit, since according to Stanley and Adam Marianski, the authors of Home Production of Quality Meats and Sausages, exceeding 170 degrees Farenheit in the smoke chamber is highly detrimental to sausage quality.

I am a temperature control fanatic and really hope the TSM 30lb Digital Country Smoker is the best electric smoker on the market for less than $1,000.  If you can offer me any insight on this product, I would really appreciate it. Thanks all!

Thanks for getting back to me!  I have not yet contacted TSM about the smoker, but I have contacted them several times in the past, and I agree they are very honest and helpful - I really appreciate their customer service.  In fact, I purchased their stainless steel stuffing tubes #56104 and I could not get the large one to fit on my stuffer.  I mistakenly suspected they sent me the tube for the 15 lb stuffer, but it turns out there is a larger plastic nut for the largest tube.  TSM sent me a brand new large stainless steel stuffing tube plus the larger plastic nut free of charge - No Questions Asked.  I was thrilled!

I really wanted to hear a few objective reviews before contacting TSM. This way I could ask them to speak to any concerns others have had with the smoker, in addition to my own.

I suspect I will end up purchasing this smoker since it is clear to me TSM understands the requirements of the sausage making process very well.  Their craftsmen seem very talented and capable of manufacturing top quality products that will last for years and years.

A member of my family has an immune deficiency so when I smoke meat with nitrates, I have to be 100% sure that the entire process is strictly controlled and conforms to safe production methods.  For us, proper smoke temperature and nitrate level is perhaps a bit more important than others will perfectly healthy immune systems.
