Can I install a thermometer on my Weber grill? And if so does it matter what kind I buy? I'm kind of a perfectionist when it comes to cooking so I would like something that has at least some degree of accuracy.
 
I suggest a dual probe Maverick or an I grill. I have a Maverick. Then you can probe your meat and have the chamber temp as well.
 
Are you talking about replacing the factory therm in the lid?

Or do you have a Weber that came without a therm?

I have a Maverick Redi-Check Dual Probe Remote. Can I use one of the probes to check ambient temp? I thought the instructions told me to not lay it directly on a hot surface. Perhaps I am wrong.

You can put the probe thru a Potato so it sticks out,that will keep it off the grate
