Having had a craving for meatloaf for over a week I did some early morning shopping at Freezermart and found five 9oz vac-sealed bags of 80-20 burger along with a 3-pack of my Italian sausage with cabernet and garlic. I dumped all the goodies into a five gallon bucket of water in my 120º garage and headed to the grocery store for supplies, by the time I got back home everything was thawed and ready for assembly. I dumped all the burger into a large bowl and one of my sausages, then vac-sealed the remaining two for a pizza later this week. Then I got to choppin': 1/2 a red bell pepper, 3/4 of a medium sweet onion, 5 cloves of garlic, 3/4 cup of Italian bread crumbs, 3/4 cup of whole milk, and a few shakes of Worsty sauce out of the bottle. I sprayed my hands with Pam and then mixed everything in the bowl up, stuffed into a bread baking dish, dumped it out on a metal pan and covered the entire thing with Jeff's Original Rub. I had a chimney full of coals going in the Weber so I dumped half of them into the SnS, threw on a hickory split, then covered it with the rest of the coals. Having a pretty good feel for the SnS lately I decided to not even bother with the grill temp, left the top and bottom vents on the Weber half closed, and put both probed of my TP-20 into the loaf, put the lid on the kettle and started getting some serious smoke. Made one check a hour in.

I had three nice taters on low boil while all that was going on, and of course I was enjoying a glass of Evan the whole time.. About the time the alarm on the TP-20 let me know the meatloaf was now at 160º I drained the water from the now soft taters and took a knife to them right in the pot with a big bunch of butter and some sour cream, skin and all.

Once that's accomplished my Loaf of Life has reached a perfect 165º so off it comes.

Everything sits for all of three and a half minutes while some spargees get micro-zapped to perfection, then plated up.

To say I was just happy with this dinner would be a massive understatement, it was pure comfort food and I was darned comfortable gobbling it all down. With what's leftover and the microwave I'll just do all again this afternoon! Thanks for lookin' in. RAY
 
sawhorseray sawhorseray Did the same thing over the weekend. Only I made up the mash taters like yours and threw a little bit of bacon in them and a little cheese and into the smoker with the meatloaf. I'm all for some comfort food.

Ray, that definitely is comfort food at its finest! It may be simple, but that’s a meal fit for a king!!

YAH!! What he said!! Ray is a ketchup guy where his meatloaf is concerned though. I just can't seem to talk him into gravy...yet. Once he makes some he'll start inventing reasons to make it and things to use it on. One day soon we'll likely see him with a bowl full of gravy covered corn flakes and yes....probably gravy on his meat loaf.

Everything looks great Ray! I usually have gravy on mine. But have been known to use ketchup on occasion. Wife only likes gravy, so that's what we usually get. It is what it is, right? LOL. The potatoes look excellent too. Thanks for sharing.

Thanks John! I put the rub on it because it was getting smoked, when I do a meatloaf in the oven I usually cover it with tomato sauce just like my mama did. Worked out well, I like smoke. RAY

Thanks Jake, I was thinking gravy there for a minute, and then I went and looked in the pantry, all the easy to make stuff was gone. I figure after watching Robert's posts I know how to make gravy from scratch, and then I sad "nah". Meatloaf doesn't need gravy and ketchup, and taters loaded with sour cream and butter don't need a dammed thing, and then the asparagus get dipped in mayo or lemon butter. RAY

Thank you Robert, it was just what the doctor ordered, easy to make and easy to sit down to! As for gravy, I now see that it needs to be made in advance of hot food sitting on the counter getting cold. So there's that, and reasons stated in the above post that it just wasn't needed at that time. Don't you have any doubt, I'll be getting around to making some gravy, probably for a hot roast beef sandwich! Thanks for the Like my friend, I need a dip and a beer now. RAY

Thanks Ryan! I guess I'll have to get more hip to gravy if I'm gonna make some folks happy. I went to boarding school when I was a kid for three years, if you ate fast enough and were lucky seconds was usually a couple slices of white bread covered in brown gravy. And you are dead on, why would anyone want or need gravy with taters slathered in butter and sour cream? I know what gravy is best for, putting over some dry Thanksgiving turkey and lumpy mashed taters! Wonder if I'll hear about that. Thanks for the Like Ryan I do truly appreciate it. RAY
