Hey everyone new member here. I have experimented with jerky the last couple years and have really found a recipe I like. If you’re into sweet and spicy like me give this a try!
One whole bottle of Bachans japenese bbq sauce.
Add honey to taste until it’s pretty sweet( couple big spoonfuls)
Add hot pepper powder or flakes until it’s pretty hot. (You want it hotter than you think) I go until it burns my tongue pretty good and my nose is running lol. it tames down after dehydrating/smoking
Same with honey.
I use enough Bachans to really cover the meat because if you don’t the meat releases water and it’s not as strong of a flavor. You want the jerky to come off the dehydrator and have a sticky shiny finish. Sometimes if I don’t add enough honey after a couple days it will sweat back out and be even better. I prefer using pepper powders in my marinades vs fresh hot peppers because
A. Doesn’t carry heat as well
B. I don’t want the flavor of habaneros in the finish product.
Can add heat with no extra pepper flavor. Let me know if you guys like it and give it a try.
