I have a smoker built by my dad in the day when the fridge was all metal.  The smoking box has about 8,67 cubic feet of space.  It currently has a 220v system with a dial connected to a capillary thermostat, and a coil element in the bottom.  This is not a good control as it will vary 35-40 degrees.  Would it be advisable to convert to a 110v system or stick with the 220v?  (Yes, I have an outside weatherproof 220v outlet)  What would you recommend for a temperature controller?  Thanks for any help you can provide.
