I INSERT THE MEAT PROBE ON THE 40" ELECTRIC SMOKER I HAVE AND THE READING IS WAY OFF ANY HELP WHAT A GUY NEEDS TO DO
 
Are you talking about the built-in probe that comes in the smoker?  I have never used the one in my MES40, but I suspect they aren't very accurate.  I always use my Maverick ET73 remote dual probe, or a Taylor digital thermometer with probe, both of which I have tested for accuracy with the boil test (212* in boiling water).  A good rule of thumb is to never trust the accuracy of the stock probes/therms.  Get yourself a good digital probe thermometer and you'll never have any doubts.
 
  I have checked mine several times with a known good digital therm shoved in right beside the factory probe and mine has always been right on. I'm not sure how you decided yours is off, but will assume you are correct. You should probably call the manufacturer and let them help you decide what is wrong.
