I remember reading that if my thermometer was attached on the side of the UDS then the temperature in the center of the UDS is about 20 degrees higher. Is this correct?
Each drum is different and will cook differently due to the diameter, height, thickness of the steel, etc. The only way to check it is to have another thermo at grate level. You can do this with a probe thermo, or get one of those cheap oven thermos, and place it on the cooking rack.
