Kinda new guy to the smoking realm and I had a frustrating situation on Sunday so I’m looking for some advice.

I have an Old Country Brazos offset. On Sunday we had varying wind conditions with long periods of calm followed by periods of winds in the 10-15mph range. I had a couple of pork butts on all day and was able to keep my temps constant where I wanted them when it was calm. Then when the winds would kick up, my temps would drop (air moving too fast thru the chamber I guess). I tried both losing the firebox air opening some. That didn’t help. I tried blocking the wind with a board and that didn’t help either.

Any advice?

Yeah, wind is my worst enemy. Backdrafts out the yin yang and it'll suck the heat right off a smoker. I'd rather smoke in the rain.
A member a few weeks ago suggested turning your smoker 90 degrees. I tried it, turning the smoker so the firebox was to the west which is where the winds are prevalent here. So far it seems to help.
 
You could try using a welding blanket covering the smoking chamber, leaving the fire box uncovered.
I have found that it helps me out with my WSM smoker.
