Summer Sausage Questions?

I want to try to make some summer sausage.  I have made brauts and polish and stuff like that.  I want to try summer sausage.  Im pretty much asking for a good seasoning and smoking instructions pretty much.  Thanks guys.  Much appreciated.

This is a pretty good starting point. Add some ECA to get the tang you expect and it will be pretty good.
