"I have a 15 lb cabales stuffer. It works good but it leaves abut 2 lbs of meat at the bottom of the stuffer. Is there any tricks or anything I could do so I would be able to get all the meat into casings"
I was experiencing the same issue. Started out putting the leftover meat into baggies, freezing it, and using it in queso for parties. I don't make large batches of sausage but I make a LOT of batches so at one point I had a whole bunch of small bags of sausage in the freezer. Thinking through it, I bought a jerky cannon that uses stuffing horns with the same diameter base as my big stuffer. When the vertical stuffer bottomed out, I remove the stuffing horn, secure it to the jerky cannon, pull out the remaining meat and shoot it into casings with the jerky cannon. In this way you can utilize almost all of the meat. I've even gone so far as to use the handle of a spoon to push what was left in the stuffing horn into casings. A decent jerky cannon can be had for around $25 so for me to be able to utilize the remaining meat, it was money well spent.
