dave if I did not have a place locally where I can buy STPP for $2.00/lb. I would definitely order some from Butcher's Pantry. I may however get some of that sodium eyrthorbate.

Yep. There is a local smokehouse that has been in business since 1971. The bulk of their sales use to be smoked products to the public, but nowadays they have had to change the business to survive. They now act as a distributor for sausage producers in the local area. All the mom and pop grocery stores buy their supplies from them to make their own inhouse sausages. Casings, cures, dextrose, seasonings.....etc.

This smokehouse also sells fish fry and other prepackaged products like red beans and rice, gumbo, etc....

I can get hog casings for $15/ hank. I need to ask them if they carry sheep casings.

BTW, when I was @ the butcher shop, I was checking the prices while waiting for the butcher to show from the cutting room. Country bacon-$21/lb., Andouille-$16/lb., Fresh sausage-$8.99/lb., Tasso- $14.99/lb., Smoked ham hocks-$5.99/lb.

Of course, the meats are pasture raised heritage breeds so the price will be higher but still....I figure they are getting $1,800~3,000 per hog.
