Storing Primal Cuts w/ Cloth?

I get primal cuts (full rib rack) from my butcher and want to find a way to store them in my meat fridge w/o using plastic bags or butcher's paper wrap. I've heard of people using cheese clothes & cotton t-shirts. Any tips?
 
So they'd be perfect for storing my cuts. How often do they need to be changed?
 
over 4-5 days? I'm OK with some moisture loss as long as it doesn't degrade the meat. Isn't cheese clothe used in DIY dry-aging?

Cheese cloth maybe.Depend on time you plan to keep them. Biggest problem you will have using any fabric or plastics is moisture which will mold and sour your meat. Even hanging in a walk in this happened when cotton meat sacks were left on meat. Ruined the whole carcass.
If they are sealed in vac bags just leave them as air has been forced out so the bad stuff will take a whole lot longer to happen.
Best is the paper but still it will leak juice and well eventually meat will go south.
Freezing is best long term.

All I do is Vacuum seal & Freeze.
Anything else is over my head, but I'm just a Dumb Old Bear.

I don't want to deal with vacuum bags/plastic unless I need long term storage. Right now I want to know how to keep meat fresh until I eat it

OK---I didn't know that's what you meant---But you do use them for long term storage?
