hi all I made a big batch of beef jerky. My wife put it in zip lock bags. In 2 days it molded badly and I had to through it all out. How do you store it safetly?

It sounds to me like it didn't get dried long enough and had too much moisture left.

Was it cool when you bagged it? That also may have had some effect on it.

If it molded in 2 days I am guessing you forgot to cure it.

Besides cure (needed for smoking at low temps), I use a vacuum sealer and freeze mine. Shelf life of a year if it makes it that long.
