Storage in the Fridge

I made a batch of Jerky over the weekend.
Its been in a "hermetic" container in the fridge.

I did make it with curing salt #1.

How long do you expect it should last in stored in the fridge?

How much moisture did it lose ? And how much fat it’s got on it ? Did you take it to a fully cooked temp? Is your fridge below 38F? If you lost roughly 50% weight and it very lean, fully cooked , and your fridge is cold it’ll last quite a while in your fridge I’d say at least a month or two ….. just watch for mold growth

Lost about 50%
There is almost no fat, I've trimmed the surface as well internal bits (I make smaller strips instead of sheet like, so it's a bit easier for me to trim the internal fat).
Fridge is around 2degC so should be cold enough. And it did hit internal temp of 160f wherever measured.

Will keep an eye for mold though.

Solid meat jerky? That seems like it would keep longer than the ground meat stuff (that I've never made).

If you want it to last even longer, vac seal portions of it and eat on one pack at a time. I have store bought jerky in my lunch-meat drawer in the fridge thats been in there months and no signs of mold. I go in fits and spurts with jerky, I'll crave it, then forget about it for a while. That jerky is still there for when I get a craving!
