got a 5LB corned beef flat in water desalinating right now. giving it 24 hours to desalinate. it looks like a real nice rectangle this time! Happy. last one looked good in the package but was butchered my a 2 year old. it was all wonky and strange shaped. gonna use this rub. minus the whole seeds.

4LB chuck was on sale at Krogers. gonna try some Holy Cow rub on there this time. never used it before but looks and takes good.

Cookin them both on the Rec Tec tomorrow.

I'll post up the cook over the weekend.

I’ve used meathead pastrami rub Pretty good. I make my own with toasted peppercorns, mustard seeds,and whole coriander. A dash of salt after running through the coffee grinder
