I used have a friend that would smoke steak and then cut it up into bite size pieces. I always called it steak popcorn because you could eat it by the hand full. Does anyone have any recipes that might work for this? Thanks.

Sounds like burnt ends! Yumm!

I would maybe try this with a small brisket or chuckie, a london broil, or even a thick flank steak.

A basic recipe for "mock" burnt ends is:

Prepare a cut of beef with a semi-sweet dry rub, then smoke it to around 170° internal temp.

Take it off the smoker...foil it and let it cool for about 30 - 40 minutes.

Remove from foil, and cut into 3/4 - 1" squares. Throw the cubs in a bowl, add a little yellow mustard and stir to coat - then toss all the cubes in a biz ziploc with 1/2 cup or so of more rub.

Once they are all coated - smoke them again until tender...about another 2 hours, I think.

I hope it's burnit ends because steak popcorn just doesn't seem very appealing atleast to me. Maybe others but why cut it up that small why not just cut it up and eat the thing. Is it so you can watch the game or a show or maybe you are tring to take it into the movie theather???

HA!!! Well, I see what you mean about why cut it small - but I'm SURE it is a take on burnt ends. You can get a lot of flavor that way, if cooked right - and it would make for a good appetizer, while the pork is finishing
