I'm in the process of my first build and was wondering if it makes a big difference using stainless steel for the grates or if regular steel is ok? I would think they would act similar from a cooking standpiont, it's the sanitary stand point I'm thinking of.

Stainless would be better, never rust.

I use regular steel for cost reasons, season them and if they do start to rust due to my own negect, blast them and re-season.
 
If you can afford stainless, by all means, but with the right care and seasoning, regular steel will work just as well.
