On mother's day I smoked 7 pounds of salmon.  On Saturday May 14th I smoked 3 racks of ribs.  Both smokes turned out pretty good even if I do say so.

The mother's day smoke was done out on the patio.  A bit breezy that day.  On the 14th the wind was just too much so I moved things back to the shed where I had them a while back.  MUCH better!  I'm keeping things in the shed now.  These Iowa windy days are just too much for many activities.

I'm glad we got the Food Saver.  Now I can smoke something every weekend without tossing anything out.  I practically gorged on a pork loin for a few days and still had to throw out a chunk that had been in the refrigerator too long.  Now I have a choice of what to thaw out and have when I haven't smoked anything for a while.

I'm almost organized the way I want for smoking.  Just a couple of minor details left.  Life is good!
 
Sounds like a couple of great smokes.
