Spring Break Pork Butt

Going on spring break to Pigeon Forge next week and smoked a butt to take. I bought an 8 lber @ $2 a lbs. I trimmed a little fat and put her on the UDS around 2PM. The UDS kept temp around 260-265 for a good portion of the smoke, but I did not start with enough fuel and ran out of charcoal and wood chunks around 10PM when the IT was at 180 degrees. (This is the first time I have ran the UDS at this high of temp... I usually don't run out.) Instead of adding more charcoal, I decided to finish it in the oven at 275 degrees. Ended up pulling it out with an IT of 203 around 2 AM. Put some finishing sauce on... kept a little to test, and then vacuum sealed the rest for the trip.

Nice job looks like it turned out well and nice bark. what kinda wood are u smoking with?

The group I went with really enjoyed the pork. I was able to keep it frozen for the trip down and then reheated my vacuumed sealed packs with warm water. To keep warm, I put it in a crockpot on "keep warm" with a little apple juice.
