now your making me hungry, what time is dinner? I can probably be there in 2-3 hours, I,ve done the clod before it is such an over looked piece of meat.

Shhh we don't want folks outside of SMF to know about clods. We want the price to stay low.

Right? :) I LOVE clods. It is my new specialty item and everyone coming to my house or any occasion I go to requiring food requests my smoked beef. I likely will do a couple 20+ pounders next weekend weather permitting.
 
2 1/2 lbs out of a 7 lb roast?????? seems like a small amount. Did I miss something here?
Yield on shoulder clods blows yield of brisket away! There is very little if any trim loss vs. like 25% or more on a brisket. Cooking loss is also on par with or less than brisket overall making a way more economical and every bit as good smoked beef. Near me whole clods can be had for around $3 a lb. If I want to do a case can get down in the #2.79 range.

Clod is on the list of favorite cuts for me.. I've bought whole clod primals at Costco and cut them up for many great cuts of meat... I really like the spinner...
