Here are some pics of the ribs that I did today on my new smoker. Kind of a spur of the moment idea but they turned out pretty good. One of the racks was a little thin so the short end kind of dried out a little, but not too bad. Smoke was perfect, flavor was awesome, think I used just a bit too much brown sugar in the rub so they are a little dark. I also cooked at about 250 degrees today so they cooked a little quicker than normal. I used a 3-.5-.5 method for these. Sprayed every hour with apple/cherry juice. This was the 2nd smoke on this new smoker. Not bad for spares. I usually stick to baby back but these were on sale.


Pretty happy with the color here. The crack in the middle is due to the bend test. 


Smoker humming right along at about 250 degrees.


This is about 2 hour in to the smoke. You can see the bottom rack is kind of crappy. Oh well....


This is a pic of the bottom rack. They were not as dry as they look in the pic. Must be bad lighting.
