Nice big meaty racks were on sale last week at Kroger for $1.29 / lb. Had to buy 6 and wish I'd have got 12 lol. Used a sugar free rub based on Lankanto Golden Monkfruit, smoke paprika, cinnamon, cayenne and SPOG.

I have never really spritzed my ribs before so decided I would give that a go too. Used a spritz of ACV, Worcestershire, soy, avocado oil and water. sweetened with a little liquid sucralose.

First coating of rub applied, hit them again after this got nice and juicy.

In the 270 cabinet , smoking away, opened to spritz

Some trimmings I smoked with a few cut up poblanos, saucing these and finishing them off

Ready to wrap here, a little crispy on a few ends so will clean that up a little. Wrapping with blue bottle, Lankanto golden on meat side and some spritz on bone side. Will post up finish pics later.

Three bones off the big end and damn was it a LOT of meat!! No smoke ring today for some reason but they were delicious. I sauce mine a little at the end of the cook but not much. Usually prefer to let people sauce them up as they see fit when eating. I really wish I had the freezer room to have bought a ton more of these spares, they are meaty as hell.
