sorry no pics but a great dish none the less..

you can use leftover smoked chicken or grill some chicken breasts, both will work

chicken breasts
1 can of kernel corn - drained
1 can of black beans - drained and rinsed
salsa
green bell peppers
1 pkg fajita seasoning
couple of limes - cut in 1/4's
Tony C's
cheese
tortilla's
1/2 cup water
2 TBLS EVOO
2 chili powder
cylantro

- add fajita seasoning, Tony C's to the water and EVOO, marinate the chicken in this mixture for at least 15 minutes
- grill or smoke chicken breasts and bell peppers
- combine corn & beans in skillet, add 1 TBLS chili powder, 2 TBLS salsa
- cook chicken
- heat mixture in skillet over medium heat
- heat tortilla's in a separate skillet or on the grill

assembly:
- slice or chop chicken
- spoon a couple of tablespoons of the bean mixture onto the warmed tortillas.
- add cheese and cilantro
- add more salsa and chicken
- this is a must step, make sure you squeeze some lime juice onto the wrap, i tried without it and the lime makes it taste much better

i use whatever the missus picks up at the store..lol

usually the cheap stuff thats why i had Tony C's to it and maybe a little more cumin and chili powder

Make your own fajita seasoning mix.
INGREDIENTS:
  • 3 Tbsp. cornstarch
  • 2 Tbsp. chili powder
  • 1 Tbsp. salt
  • 1 Tbsp. paprika
  • 1 Tbsp. sugar
  • 2-1/2 tsp. crushed chicken bouillon cube
  • 1-1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp cayenne pepper
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 tsp. cumin
PREPARATION:

Combine all of the ingredients in a small bowl. Pour into small glass or plastic container, seal tightly and store in a cool, dry place. Makes the equivalent of 3 packets of commercial or purchased Fajita Seasoning Mix.
