Made southwest chicken and shrimp salad for dinner today. Marinated the chicken and shrimp in garlic, lime zest, juice of two limes, cilantro and olive oil. Then while I fired up the kettle grill, applied my home made southwest seasoning and grilled.

Southwest seasoning
2 Tbsp kosher salt
2 Tbsp granulated garlic powder
1 1/2 Tbsp smoked paprika
1 1/2 Tbsp sweet paprika
1 Tbsp granulated onion powder
1 Tbsp ground black pepper
1 Tsp ancho chili powder
2 1/2 Tsp chipotle powder
1 Tsp Turmeric powder
2 Tsp coriander
2 Tsp cumin
2 Tbsp oregano
2 Tbsp cilantro flakes if you can’t find omit

Home made spicy creamy cilantro dressing
1 bunch cilantro stem okay
3 to 4 cloves garlic
1 jalapeño seeds and all
1 1/2 cup mayonnaise
3/4 cup Greek yogurt
Zest of a lime
3 Tbsp lime juice
1/2 Tsp coriander or more to taste I go heavy
1/2 Tsp cumin or more to taste heavy again
1 Tbsp honey
Salt and pepper to taste

In a food processor I add cilantro garlic and pulse, add the lime zest juice jalapeño pulse again. Add rest of ingredients and blend till smooth taste adjust if needed.

black bean corn salsa
Sautéed half a red onion diced added can of rinsed off black beans and about a cup or so of charred corn in olive oil. Added a Tbsp of the southwest seasoning and let come to room temperature. Did not over cook.

added diced tomatoes and avocado and tortilla strips dinner done.

you can put young/fingerling potatoes, onions and carrots in the drip pan with herbs of your joice and maybe some thinly sliced lemons. As the chicken fat runs out, it fries the taters in the pan and caramelizes the onions/carrots. Sometimes the chicken cooks too quickly, and I will pull it the grill going full bore (400 - 425) for 10-15 mins while the chicken rests and gets cut up. Easy side, with no additional dishes.
