I've been looking at some of the UDS builds, and they are really intriguing.  Right now, I have a ECB, but would like something bigger, and it seems like these units are much more efficient than some of SFB options.

My first question, regarding the air intakes on the bottom.  It looks like most use some type of adjustable valve, but is one sufficient, or do people use 3-4 around the entire circumference of the drum?

Second, on longer smokes, how do you add more charcoal to the drum, do you have to remove everything to fill it down on the bottom?

yes, they are 100X more efficient.

need 3 or 4 air intakes ,one will have a ball valve and the others will have caps .
Second, on longer smokes, how do you add more charcoal to the drum, do you have to remove everything to fill it down on the bottom?   you will need to build a charcoal basket and it will last 16+ hours . so most likely it will last longer then any smoking that you do.
