I've only been smoking the usual stuff........that does look good so I might have to give it a shot too. That does look good!!! Nice job!!

I got the potato dumpling recipe from my friend Chef Cathy.

6-7 medium potatoes - boiled and put through a ricer
1/2 cup each AP flour and Semolina - mixed together
2 eggs
S+P to taste
Sprinkle of Nutmeg

Rice the potatoes, season, add eggs and mix, add enough flour mix to form a dough that makes a ball in your hand when you squeeze some without sticking to your hand. Roll into golf ball sized balls. Drop into salted, simmering water. When they float they are done.

Sounds pretty good, except the nutmeg. I've had to keep nutmeg out of our house since my wife always seems to get experimental with it. It never goes over well. You've never lived until you've had nutmeg flavored french toast, and not a mild sprinkling, a ton.

Just be careful with the nutmeg. Chef Cathy says that it's a "traditional" spice in potato dumplings.

It came off the smoker at 140°F. It rested in double foil wrap while I made the sauce.

Looks great! I love the idea for the gravy, I bet that has an awesome flavor!....and the dumplings!!!!...ok i think i used up my limit on exclamation points...thanks for the posting the recipes
