I knew I had a gift coming, but wasn't expecting a brisket! 10lb'er trimmed. I guess I'll be cleaning the pellet grill tomorrow as my freezer is packed to the limit already!

This will be my third brisket and I can't remember what wood I used before. Probably mesquite or hickory. Fortunately I have a full shed of practically every Lumberjack wood type. Any suggestions on what wood or wood combinations I should use for this one?

Great gift! I'd say use your preference of woods, we are all different on what we prefer. But definitely post up pics when you smoke it!

That's one reason I like pellets. You can custom blend your own smoke.
If it were me, I'd go with 60% oak, 30% cherry, and 10% mesquite. I like the mahogany color that the cherry produces.

Congrats on a great gift.

For me I tend to use oak most, but did like the one I did with cherry. Never tried a blend, but oak/cherry is now on my list to try.
 
Pellet cookers don't tend to leave a real strong smoke profile. I don't think you'd regret sticking with all mesquite pellets.
 
I agree with Bill. I would go with a strong wood like mesquite or hickory. Or a combo of both.

Thanks for the suggestions. Since the last two were likely mesquite and / or hickory, I think I'm going to try some oak mixed with some cherry.

How long will this brisket be good in this vac pak? The label doesn't say and the info sheet is a generic insert that says one week (same one I got when steaks arrived, so they must use it for all their beef shipments).
 
well, the cook went reasonably well with the exception of the grill fire going out 15 hours in. I went with cherry and oak with a bit of mesquite mixed in. Good bark and moist inside. Turned out great!
