You can make shorter sausage sticks.. Like maybe 8"... and hang them as high as you can...

Or install a SCR on the heating element and cut down on it's wattage... Try and get it to stay on full time and keep your smoker at 150-160 F...
 
The chubs will get to IT faster when lower to the heat (thats how it is) You could rack them higher if your MES is getting to hot. You only need to take the chub IT to 152-153. If you go higher a risk of a fat-out may happen. After going through 4 MESPOJ I went with a Sausage Maker smoker.
