Hi Everyone

I have been getting my pork shoulders at my local Sam's.  They are a 16lb package that has two 8lb shoulders individualy wrapped.  I usually cook one at a time for 12-14 hours.  If I do both at one time would I time it as I do the single 8lb, since they are seperate? Or time it as a 16lb hunk of meat (24-26 hrs)?  I know the temps will tell me when it's done and ready to pull, just tring to work out a timeline.  Thanks

Time it as one piece. I always add a little extra time into my plan just in case things go long. I always plan close to 2 hrs per lb.
 
Individual pieces...... I figure my cook time on the largest @ 2hr a pound and probe the smallest....I will pad with a couple extra hours for OS factor.....
 
Thanks for the replys.  I am just doing one tonight for lunch tomorrow, but plan on doing two for Super Bowl and was wondering about the time.  Have a great New Year!
