Thank you, Next time, which will be toward the end of the month, I will try to capture my Marinating process and rinsing and using Honey and a rub and more of the smoking adventure.  It never fails, every time I smoke something, my neighbour, Ed,  always give or brings me something to smoke, usually when I am about 3 hours into the smoking process.  Makes life really interesting, to say the least
