I'm on a Tejas wood smoker. Been on for nearly 6 hours at 225, or so.. Been trying to keep it regulated but it's been kinda fluctuating. Been as hot as 275, think I've finally got where I need it. First time using this smoker. Any tips on making this butt fall apart?
 
Have to figure 2 hours per pound, and then another hour after that for the rest, in a bucket wrapped in foil and covered with towels.

How big is the butt you have?
 
I usually cook to an I T of 205 degrees or until you got decent wiggle with the bone.
