I have a horizontal smoker with a grate in it, and I am planning to make smoked link deer sausage this weekend. I don't currently have a way to hang the sausage in the smoker, so my plan is just to lay it all out on the grating. Other than appearance with making grating marks on it, is there anything I am missing that it would need to be hung up for?

It will work fine. The hard part is regulating the temp if this is cured sausage, and you need to run the temp up in 10 degree increments.
If it's fresh then you can just run it at 225 until it's done.

We will be smoking at 140-150 degrees for about 5-6 hours. Not wanting to fully cook it, just smoking.
