Good day everyone, my name is Jaco and I'm new around here, and look forward to learning. Per a request here is a brief intro about my smoking activities.

I have both a Weber basic grill which I sometimes smoke on, and now a Masterbuilt Smokehouse 30" electric smoker (model year 2011 probably). I will be doing most of my smoking in the Masterbuilt going forward, as it's much easier now that I'm relegated to an apartment lifestyle.

I am interested in making my own charcuterie, smoking everything possible in the Masterbuilt, creating matching cocktails, and making awesome food in general. When given the option (and budget) I'm more inclined to go the 'natural' route for healthier meat (ie. grass fed, organic, cage free, pastured, etc.), and just buy less of it to stay on budget. Nearly all meat I smoke now is of this variety (can't afford to do it as often though).

JACO, morning and welcome to the forum..... Sounds like you are already addicted to the smoking bug..... There are many recipes to be tried, members have posted here....  Post pics of your endeavors to share will all of us... we love looking at smoked foods....  Enjoy the long smokey ride....  Dave
