I’ve read a lot about smoking chicken breasts on here. Most people do them in at most 90min at 250 from what I read. It took me close to 6 hours until I got an internal temperature of 165! Is this normal? My digital thermometer was between 248-253 the whole time. I’m using an older vertical masterbuilt propane smoker if that matters.

Also my breasts turned out dry, great smoke flavour though lol

Unless the breasts were from a pterodactyl they should not take six hours at that temp.

i had the same problem where the probe just wasn't reading. i didn't go 6 hours, but went maybe 2.5-3 before checking on it and it was... less than ideal. not sure why probes decide to do that.
