Dave is correct.   The USDA does not allow Nitrates in manufactured belly bacon but, does allow it in home cured bacon.   It is my understanding that it is because manufactured bacon is injected resulting in very short cure times, unlike home cured bacon that requires the longer, seven days per inch cure times and lower cooking temps.
