I just bought an oklahoma joes smoker. I bought a 30 lb pig and want to smoke it, I keep getting different answers about smoking time and temperature. Some say it will take 6 hours some say up to 12 hours. Anyone have any suggestions?

The folks in eastern North Carolina have been cooking whole hogs over wood coals since the mid-1600's and have developed the technique to a high level.  The best book on the subject is "Holy Smoke" by John Shelton Reed.  Get a copy and read all about it.  Much like beef is king in Texas, it's pork in the southeast.  Search the web for lots of available information.
