I just started a mobile kitchen. Will serve a variety of foods but want our smoked products to be the headliner. I need a smoker that can sit outside the trailer in a parking lot; etc... it needs to hold heat well, require little tending and be as portable as possible (won't be able to pull on a separate trailer). With Ramos and provided it's less than 3ft in width I could roll it into the concession trailer and secure it for transporting if needed. I'd say if I could do 6-10 butts, 8 racks, 4 briskets at a minimum it would be adequate. Not ruling out pellet cookers by prefer something that doesn't require power or moving parts. Need to keep the cost as low as possible due to being a start up. I'd like to stay below $2500 and likely in the 1400 to 2000 range. Please give me your suggestions?
