Hello I'm new here, I'm building a cabinet type smoker, I have a few questions.
1- I'm building the cabinet out of mild steel and do you need to remove the mill scale on the steel on the inside of the cabinet?
2-what kind of stainless steel do I need for the racks?

Remove the mill scale and oil, from processing..... mild steel expanded metal works for grates.... coat both with cooking oil and heat to set the oil for a good coating.... repeat as necessary..... 304 SS is cheaper than 316 and works very well.... whatever is in your budget... expanded metal needs a framework to support it...
