Thats a fine lookin smokin shack there jerry. I need to get busy on one come spring. But my things to do list is getting pretty big.
 
Great looking smokehouse, Pinywoods. Now a dumb question, that will cold smoke stuff right? Will you have to cure things you put in the smokehouse? What temp will it get to? Sorry for all the questions be I am very curious, when I was little my great-grandfather had one and it had a box that had salt in it where that put the meat.
 
In the clay here were water doesn't drain very fast and the daily showers of summer it would be swimming.

Yes it is for cold smoking and the meat will be cured before going in. I haven't stuck a thermo in it yet to check the temps but will be in the next couple days. Many people run a hot plate or gas burner for heat and I'm not sure if I will do that or not. I too remember my grandfather's smokehouse and sure wish I had been old enough for him to teach me how they used to do it.
 
Looks great Jerry. I would wait until after the gathering before adding the steps. Either that or put a lock on it. When BC and Shooter Rick get to drinkin they might mistake it for the............ well you know.
