I would like to say all went as planned but it had some flaws. Tonight I smoked a 7.8lb chicken using apple pellets. The chicken turned out beautiful. Skin nice and crispy. Meat juicy and fall off the bone goodness. The portabella's were stuffed with a mixture of shrimp, cooked bacon, sautéed sweet oinions, garlic,
Grey Poupon, horseradish sauce and some flavored bread crumbs. They turned out good. Too much garlic. Coved up the taste of everything else. Oh well. Live and learn. Did pork shots with it. They turned out good. Bacon over cooked. Damn Mes40. This thing can crisp things without a problem. When I went and checked up on everything I should have pulled them. They were golden. But I smoked them I think too long. After coating with bbq sauce they stayed crunchy. Even after a while. Still the chicken turned out really good. Be the best or just ok. I'll still post it. I don't see things like this much. No shame though. Cooks fault.

Looks Great!

I didn't think you could get too much garlic.
Grandpa's garden got away from him when some garlic went to seed. There was volunteer garlic's everywhere for years.
I use to pick them when they were the size of small green onions, peal the outer layer, and eat them while weeding.
My Daughter would gag when she smelled my breath. :emoji_laughing:
