Hi All I'm still looking for a GOOD Bratwurst mix that is already prepackaged..I tried the LEM  mix was kinda salty for me, and didn't taste like bratwurst I was looking for.

Anyone tried some of the others, there are sooo many.. Would make my own mix, BUT way too many spices in the recipes I see.

My uncle Sam sent me too Germany for  2 years, and ate some great bratwurst there, Couldn't find any of the store bought ones to match, even tried a couple of German butcher shops. None can compare to what In ate while I was in Germany.

I was hoping someones prepackaged mix would come close? One of the reasons for me getting into sausage making, was the Bratwurst. I have already made Sweet Italian Sausage that came out really good.

I don't use mixes because it's a hell of a price to pay for what's mostly salt, and most of them have crap in them like soy and other garbage.

You won't find any of that stuff in real German sausages.

In what part of Germany did you enjoy the bratwurst?

FWIW, I got this recipe from a friend who was a foreign exchange student in Germany.
The family he lived with used this recipe in street vending.

Classic Nürnberger Bratwürste

Add the following to one kilo of ground pork;

18g Salt

2g Ground White Pepper

0.5g Mace

0.5g Nutmeg

1g Marjoram

Grind the meat through a 6mm or 4.5mm plate and then add all the spices and salt and mix well before passing through the grinder a second time. Stuff into sheep's casings and grill over beechwood.

Hi Martin I was stationed in a town named Kaiserslautern, was many years ago.

I remember walking back from town, I would stop and pick up a bratwurst and a cone of prom frites. Frites were right out of the oil.There was a prom frite  machine that dropped the potatoes right into the oil, then scooped up into the cone..

I can still remember those days.I'm thinking your recipe is for fresh brats..Right? Just might give it a try,next time I make sausage.I just have to convert the measurements.

I'm trying to convert the Bratwurst recipe that Martin posted. Any more good/interesting Bratwurst recipes, I can try?
