2.2 lb salmon (half eaten by hungry cook before serving family!!)

Temp 160

Time 3:30

Hardwood flavor-apple

Brine: 1 gallon water, 1/2 cup kosher salt, 1 bottle beer, lemon juice---- 2 hour soak.    Rinse in cold water, pat dry with paper towels, air dry to form pellicle  ( about 1 hour)

1 tuna steak--same as above

Do NOT overcook your fish.
