Smoked Quail

Anyone ever done quail before? I have a bunch of them from last years season. I need to do something with them. My son is coming over tomorrow for his birthday and I was thinking of putting on some quail and some elk polish along with some ABT's. We're also going to make up some Boudin.

I would imagine I would go light on the rub since they're nekkid and have no skin.

i havent smoke any but as far as what i have read, they need some moist heat, wrap in bacon...everything is good wrapped in bacon..lol
