Ever since Lonnie Ray's BBQ closed it's doors, I have not had a smoked bologna sandwich. I was missing it bad today so I bought Prima Della beef bologna (Walmart deli) and trimmed it down to size, about 1-inch thick. I also scored it to keep it from warping in the smoker. I seasoned it up with garlic powder and Mrs. Dash Chipotle Seasoning about 2 hours before it went into the smoker. Since it was already cooked, I smoked it at 190F for about 3 hours using pecan for smoke.
This is definitely one of the easiest smokes I have ever done and it will be done again soon. The smoked bologna sandwich was delicious.
Next time I will slice it 3/4-inch thick. 1-inch thick was fine, but you had better have a big appetite.
