With the demands of my business, it has been a while since I was able to smoke with offset barrel smoker. While it took longer than I thought, the results were definitely worth it. As soon as I did it, realized I put coals in in the wrong order. Should be cold down then hot on top. Whoops! THe end result still made it worthwhile. We definitely need to practice more and that is not a problem. Bad day bbqing is betted than a good day at the office anytime.

I used maple wood chips and made up a bbq sauce. Tender, juicy & tasty!
