Well all two and a half weeks is way too long to go without smoking so it's time. I saw a smoking recipe in my wife's Southern Living magazine ( June 2014 edition ) that sounded pretty good. So I cut a whole fryer in half and it's marinating in fridge. I wish I could marinade it longer than 8 hours but unfortunately I have time constraints. More pics and details to follow.

Cool - count me in!

Timberjet here are he ingredients
6 tbs olive oil
1/4 c peanut oil
1/4 c chopped fresh parsley
2 tbs chopped fresh basil
2 tbs chopped fresh oregano
2 tbs fresh squeeze lemon juice
2 tbs Dijon mustard
4 tsp dark brown sugar
4 tsp Worcestershire sauce
2 tsp table salt (I used sea salt )
1/2 tsp ground black pepper

Place ingredients in freezer bag and place chicken in bag and shake.

Marinade in fridge for 8-12 hours

Smoke skin side up at 325 until done

Taste was good. Definitely had some good smoke flavor. Unfortunately my wife decided she is not a fan of smoked chicken. She says the smoke flavor masks too much of the marinade taste. So I probably will either grill or roast the chicken next time using the same marinade and stick to smoking pork and beef to keep the wife happy. Good news is more chicken for me! Haha

Thanks for the recipe. Always looking for something new for chicken. Just out of curiosity what wood did you smoke with? She might like it if it was a wood that complimented the marinade more. Just a thought. I recently did a whole chicken with maple mostly because I was out of apple and the maple tree above my house is always shedding branches. It was a sweet, mild, not too smoky flavor. Just a thought.

I used apple wood I got from Walmart. Nothing fresh. So I can take downed maple branches and use them? I have a silver maple that is constantly dropping dead branches

Thanks Mounkey but I cannot take the credit. It was a Southern Living recipe. Did you smoke yours?
