Brined 2 small chickens yesterday, rubbed with OO and then dry rub today and tossed on the smoker with the Eye round that had some OO and dry rub on it.
Read so much about Dutches' beans so I had to try them - the peppers.

Cut up Eye Round. This thing was super moist...

One of the 2 Chicken.. Brined in 1 gal water, Kosher Salt, Sugar, Thyme, Pepper and something else??? Don't remember what I tossed in yesterday :)


I still can't believe how moist the chicken is after the brine. I rubbed some dry rub under the skin on one and just on the skin on the other. Big difference in the taste. I liked the one on top better then under the skin.

Wife says NO way are those beans gonna be better then my baked beans.. 3 hours later after the smoke, I asked her so are they as good as yours?? She said no!! Better then mine..
