SmokinRon, The beans are easy...
I saute some minced onion and 1 clove of minced garlic in lard. (shortening works fine)...then add 2 cups of cooked pinto beans.
I smoosh them a bit while frying. They get nice and creamy but there are still some whole beans in the mix.
Then season with salt and pepper to taste.
