Gonna try out Jeff’s recipe for 3-2-1 ribs tomorrow. However, only have 1 rack (3.8 lbs) and the recipe calls for 2 (4 lbs each). Would I use the same smoking time of 6 hours?
 
3-2-1 is a solid way to learn ribs, but I would really recommend temping the ribs during the "1" stage.

See what temp they finish at after the 6 hours is up and decide if you like them just at that temp, or if you want a more "fall off the bone" rib (cook to higher temp) or if you want a more bite through rib (cook a bit less).

That way you know next time as rack thickness varies and 3-2-1 is not a dead science just a guide to get you to what temp you prefer most :)
 
The 3-2-1 is a guideline. Some racks will fall apart if you try to wrap them for the whole 2 hours. I usually wrap them and then check how bendy they are and how much pull back they have on the bone after 45 minutes to an hour. You have to make that judgment call based on how you like your ribs: FOTB or with a little more bite. Good luck on your journey for the perfect ribs. Let us know how they turn out!
